By way of follow-up on the sap post from last week, it’s worth mentioning that subsequently I got 12 more gallons from the same source and cooked them down into one resplendent bottle of syrup (a quart plus an extra half pint which I poured into the other syrup in the fridge). Meanwhile, I’ve been steadily gathering and reducing sap from the smallish birch trees near the garden. The birch sap is for something else, but the maple syrup is pure liquid sunshine, magically appearing at the time of year when we need it most.

I saw a friend’s post on Facebook yesterday morning about free maple sap on offer, and in a matter of hours I was there with jars and growlers to fill, ending up with 2 1/2 gallons for my very own. Now given the 40:1 reduction ratio to make syrup, that wasn’t going to yield a whole lot. So I thought of other things to make with it instead, treating the sap as an ingredient. After tasting some partly-reduced stuff from the big pot on top of his wood stove–which had a profound vanilla flavor–I figured that letting it cook down a bit before using it would make the sap more useful for what I had in mind.
You know how Coldplay sounds like diet Radiohead? That’s how regular bacon tastes compared to the miso-cured version; miso bacon is deeper, tangier, creamier, and has much more umami. The enzymes in the miso soften the meat while the salt and sugar firm it up; the result has a different density and is more sensual. The profound flavors of the miso add overtones to the meat, giving it a haunting complexity. It’s so very good.
A dear friend’s impending birthday gave me an excuse to spend an afternoon cooking, so after I ran a bunch of errands (including picking up 12 lbs. of pork belly for bacon) I got down to business in the kitchen. In the five hours between my return home and the arrival of the guests, I made a few dishes that turned out pretty well, and one that was damn good. And the wine, courtesy of John, was a beautifully curated study in Bordeaux-type wines vinified in places that (mostly) were not Bordeaux.
For Christmas eve dinner, we went to a party nearby with dear friends. This was a change from our original plan, but fortunately the original plan called for eight legs of duck confit so we were well prepared to arrive in style. The only hard thing about making confit is remembering that you need to do it at least the day before, preferably two. Weeks ahead is actually better, since the flavor improves over time, but it’s not crucial. Besides timing, the rest is almost as labor-free as cooking gets.
Recently at a market that carries some good local meat I spied a big old cow tongue. I’ve never cooked it, but I have memories of my Grandfather serving it to me on occasion. It always sort of creeped me out; that boiled beef smell and the gray pallor of the giant tongue just didn’t add up to appetizing. I did eat it, and it did taste pretty good–if kind of bland–but I sort of filed it away in the “things old Jewish people eat because they grew up dirt poor in Poland” category and didn’t give it much thought for a long time. So, seeing in the cooler, I decided that I would give it a shot, and do what I could to minimize those qualities that had turned me off it as a child: I would make it into pastrami.
Usually when I see the end product in my mind before I begin to cook it turns out pretty well. I don’t know why this is, but I’ve learned to trust it; when I want to make a particular thing–even if I’ve never made it before–I do my best to make it. It almost always works.
I spent some time last Thursday talking to students about the practice of painting, and how after all these years building said practice I have total confidence in it, even if as now I’m on a hiatus from working in the studio. That trust makes for a real absence of stress, since I know that it will be right there when I start to feel the pull to get back to it. It’s a dividend of all the time and effort I’ve invested in working over all of these years. And cooking is the same, in a way; I don’t beat myself up if I’m not really feeling it, and sooner or later I get it back and all is well. The difference is that taking a hiatus is not really an option, so when I’m not in the mood I still have to do it. But diligence does pay off, and sometimes a really good idea just sort of falls out of the sky.
That’s what the email said, just to ensure that the more squeamish guests would be arriving around 5.
The invitation landed in my inbox because Eve had emailed me, asking “do you know where a friend can get a pig?” and I directed her to Richard at Northwind farm, where they raise a variety of first-rate pastured meat. I get my belly from them (in more ways than one). In exchange for the pig hookup, I got to attend a special sort of barbecue. The kind that begins with a live pig, and ends with dinner. Tate, the host, thought it would be a good idea if all of his hipster Brooklyn foodie pals connected with their meat in an intimate and direct way, seeing exactly what it is that goes into bringing an animal to the plate. It was an interesting idea, and I was by myself that week, so the prospect of meeting some nice people while soaked in pig’s blood seemed like a no-brainer. I charged both camera batteries (I have two now, because Claudia sent me one).
Richard and the pig arrived (a little after noon, actually) and he described how the pig would meet its end. He slipped a couple of ropes around the animal. Tate loaded the .22, and they worked out who would stand where. The picture below shows the moment where the pig figured out that the day was not going to go very well at all.
