John and Debi brought Tim (up for the weekend from FL) for a decadent dinner. I made the food; John brought the wine. That was the deal. Normally with multi-course meals I can see the dishes in my head beforehand, but in this case they were a little blurry until just a few hours before dinner. Most of it came out pretty well, though I had to scrap one course and I forgot to add…

Whenever we go to Chicago for a holiday I like to give Christine’s Mom a break by doing the cooking. This time around I tossed a bag of activa in my dopp kit just in case, because the pea soup gnocchi got me thinking about other gnoccification possibilities. Filet of beef was the focus of the meal, so I began by using the activa to glue bacon around it in rings, plus gave it a…

Liz had her annual holiday party, and it was as wonderful as ever. The food, wine, and company were outstanding. The guys even played a few tunes; Liz has a piano, Chris brought his bass, and Billy played a saucepan with a spoon. Highlights included Gerard’s togarashi roasted halibut, Liz’s artichoke pizza, and my now-traditional duck sushi on black rice with cranberry-wine reduction and pickled black radish. Wines included a 1992 Sirius “Doomed Vines” Petite…

The numbers: 8 adults, 11 courses, 7 bottles, 6 hours. The pictures: Duck and pear: Melons are long since out of season, so these are local organic red bartlett pears. This duck took about three months to cure, but was SOOOO worth the wait. Leek & Gruyère tart: A dribble of truffle oil and grating of Indonesian long pepper on top put this one into orbit. Celery root-leek-potato soup: Local milk, veggies from the garden,…

Word spread, and many showed up for a pot luck party. Highlights from the food included ceviche of halibut and grilled side of wild salmon, roasted potato salad, braised seitan with port, ratatouille, and the six chickens I smoked and served over homegrown and fermented kale shredded like sauerkraut. I also made a torta rustica– a many-layered vegetable and cheese pie encased in pizza crust- which tasted great but fell apart once cut open. The…

On short notice, Kris invited me down to the city to join them for a celebration. It was well worth the trip. Excellent food, wine, and company. Here’s the menu: Crab Cake and Smoked Trout on Toast 1997 Bollinger Grande Cuvée Mushroom Soup with Bellota Ham of Joselito, Shiitake Mushrooms, 7-day cooked egg yolk & Arbequina Olive Oil Air 1951 Barbeito Sercial Riserva Velha Madeira (from his birth year) Alaskan Wild Scallops with Corn Sauce,…

Liz had yet another dinner party, and I had a hankering to make paté again. So as before, ground pork, rendered bacon fat and the bacon plus spices, garlic, and this time cream, Calvados, and stale bread went in a terrine and into the oven. For some reason it broke- the fat separated out- so once cooled a tiny bit I puréed it all back together again and pressed it in the fridge for four…

Phillipe and Lea hosted a party for John, and several people brought some food and wine. Phillipe made fantastic boeuf bourgignon and a sublime gratin of cauliflower; Liz curated the perfect salad from her garden and made her signature cashew cream to pour on gorgeous fresh berries for dessert (there was also cake.) I made the raw sweet potato salad, twice-baked tiny blue potatoes with fromage blanc, chives, and truffle oil mixed in and baby…

Another city trip, and finally we were able to schedule a dinner at Kris’ house. Mary came, and Sujit and James, and Sujit’s Mom, and Susan. Kris made many courses, most very high-end riffs on simple comfort food. The amuse bouche was a tiny bowl of puréed chard atop a dollop of parmesan cream- like creamed spinach but super refined. Next came ham and eggs- a poached egg with super fancy jamón and a red…

Liz invited a few people over for a dinner and bonfire. Everyone brought something, and we grilled many veggies- eggplant, zucchini, mushrooms, radicchio, onions, asparagus- plus fish and chicken. Phillipe made a crazy leek salad, Sirkka made roasted potatoes, John made salad and brought an intense daikon and ikura relish, and Chris manned the grill while I dealt with squid and tuna; a pesto/umeboshi/lime mixture went in & outside the squid, then they cooked over…
